Fried Chicken Salad

When the summer heat turns up and the thought of cooking makes you shudder, think about this quick salad with lots of fun flavor and crisp vegetables.
They key to making this easy is access to some fried chicken tenders in your local grocery stores "hot case". Of course if they don't have any you can cook some in your oven, or if you're awesome...your deep fryer.
Prep Time: 10-15 minutes
Makes about 4 dinner servings
Ingredients For The Salad
3 Heads Romaine Lettuce 2 Roma or Vine Ripened Tomatoes
1 Head Red Leaf or Iceberg 1+ Cup Shredded Cheese
1 Cucumber 1 Bag of Crispy Tortilla Strips
1 Bell Pepper 1 Lime
3 - 4 Green Onions Red Wine/Apple Cider Vinegar
8 Fried Chicken Tenders Olive Oil
The Process
Prep your lettuces by washing them and drying them first, then either cutting or hand tearing into smaller salad sized pieces and placing them in your salad bowl. Next, start working on your other ingredients. Cut the cucumber, tomato and bell peppers into small dice sized pieces. Slice the greens of the onions into small rings and add all of the items into the bowl. Add the shredded cheese and tortilla strips.
Slice the chicken tenders into small pieces, about 1" cut cross wise, and add them intoi the bowl also.
To dress the salad I personally like to squeeze the juice of one lime, add a splash of vinegar, salt and pepper then olive oil and toss together. You can add any dressing you like.
Feel free to add any other items into your salad such as, avocado, cilantro leaves, charred corn, etc.!
