Banana Bread
Not too long ago a co worker brought in some banana bread that he made from a recipe that used brown butter rather than melted butter. Forgetting to ask him where he found the recipe I just took my banana bread recipe and browned half of the the butter ! It adds a complex rich and nutty flavor - why didn't I think of that ?!
Prep Time: 25 minutes Makes 1 loaf
Cook Time: About 1 hour
Ingredients:
1 cup granulated Sugar
8 tbsp. (1stick) unsalted butter
1 tsp. vanilla
2 eggs
3 ripe bananas
1 tbsp. + 1 tsp. milk
1 tsp. cinnamon
1/2 tsp. nutmeg
2 cups all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
Pre heat oven to 325 degrees
Butter a 9x5 loaf pan
In a large mixing bowl cream the sugar and half of the butter and vanilla until it becomes fluffy and light. Then add the two eggs one at a time mixing well.
In a saute pan brown the other half of the butter and set to the side to cool
In a smaller mixing bowl mash together the bananas and mix in the milk, cinnamon and nutmeg. Once the mixture has comet together add it to the creamed butter and mix together. Add the browned butter and mix.
Now add the flour, baking powder, baking soda and salt. Mix until the flour disappears.
Pour the batter into the greased loaf pan and place in the pre heated oven.
Bake for about an hour or until you can poke a toothpick into it and it comes out clean.
